From the Disney Family Editors: Oh boy! Making it may be messy, but it's still lots of fun to do with the kids, with a healthful, tasty snack as the final product.

A great recipe for kids to make. No baking! These cookies are so nutritious, kids can eat as many as they want. Just don't tell them.

Yield:2 to 4 dozen
Ingredients
 2 cups peanut butter
1 cup wheat germ
1 cup dry milk powder
1 cup honey
1/2 cup flaked coconut
Directions
  1. In a medium bowl, stir together the peanut butter, wheat germ, dry milk, and honey, until smooth. Roll into walnut sized balls and roll the balls in the coconut. They're ready!

These sound good, although I wouldn't use the coconut. I bet crushed graham crackers would work as a substitute.
