Family 5: Our Camping Cookout Menu

From the Disney Family Editors: Camping often evokes images of cooking hot dogs on giant metal forks over an open fire. Well, friends, we're here to tell you that camping cuisine has changed. These recipes would taste great by the bayou -- or in the backyard.

Camping with the whole family is a little different than hiking days into the wilderness and living off whatever sticks and berries you can gather. Thankfully, the presence of young campers usually coincides with the presence of coolers that can store perishable food like eggs and ice over the weekend, as well as a good excuse to roast marshmallows. Bring a skillet that can sit over the campfire, extra water, and a few supplies, and you've got just about everything you need to cook hearty meals that will give your family the energy to get up the trails, across the lake, and into some serious camping fun.

  1. Breakfast Scramble
    Eggs and cheese will last a couple days in a cooler full of ice. Bring a couple veggies to chop up and toss in, and you've got a perfect sunrise surprise.

  2. Trail Mix
    The stuff you buy in bags is usually full of preservatives, and often filled with candy. Go to a health food store or supermarket that sell nuts and dried fruit in bulk bins, and let your kids pick out the ingredients they want. Mix it all at home, and prep snack baggies for the "expedition."

  3. Blackened Fish
    If someone in the family fancies themselves an angler, this recipe will come in handy when they come back to camp with a string of freshly caught fish. And when they come back empty handed, you can smile and pull the fish you bought at the store out of the cooler.

  4. Ice Cream in a Bag
    Just because you're away from home doesn't mean you have to miss out on the creature comforts. Making ice cream on the go is a fun activity for little hands. Bonus: It burns off enough calories that eating the fruits of your labor doesn't feel as guilt inducing.

  5. S'mores
    What would a camping trip be without the quintessential campfire treat? Sure, there are only three ingredients in the classic recipe, but we've got some fun alternatives you must try.

One of our family favorites is "Potato-Ball". We cut up peeled potatoes, cut up carrotts, a few large pieces of onion, a couple dollops of butter, salt and some pepper, and wrap it all up in a few large sheets of foil. Place that on top of the fire grate, or next to it on the fire ring rock, or even buried under some hot coals for about 30 minutes. It'll all simmer in there together. The onions an be pulled out and all the kids are left with is great tasting carrots and potatoes. Enjoy!

When I was a Girl Scout, one of my favorite camping dinners was Ranger Stew - it was simply browned ground beef mixed with cans of vegetable soup, but it sure was good!
