Pink and Blue Cupcakes

We picked up our copy of the Sleeping Beauty 50th Anniversary DVD last week and in honor of this happy occasion, I've made cupcakes. I think cupcakes are such a fun vehicle for many different decorations, and I know for sure that the kids feel the same.

Three of my very favorite Disney fairies aren't Disney Fairies at all; Flora, Fauna and Merryweather of Sleeping Beauty are simply fairies. These pink and blue bites are inspired by a scene in Sleeping Beauty that involves the three fairies. The fairies are attempting to create a dress and cake for Princess Aurora's birthday and Flora and Merryweather disagree about the color of the dress. One wants it to be pink and the other blue. The result is pandemonium as the spells cast fly around the home and eventually up and out the chimney.

This is an easy combination of boxed cake mix, food coloring and sparkling sugar - I used Sparkling White Sugar sold by Wilton.

Pink and Blue Cupcakes

Hands-On Time: 20 minutes
Ready In: 1 hour
Serves: 18-24 cupcakes

Ingredients:

1 white cake mix
1 container or 2 cups white icing
several drops of red and blue food coloring
large crystal sugar
pink and blue cupcake liners 18 - 24

Directions:

1. Prepare boxed cake mix according to directions and pour equal amounts into two bowls.
2. Color one half of batter with red food coloring to make pink batter and the other half with blue food coloring to make blue batter.
3. Place cupcake liners into muffin tins. Fill each liner halfway with blue batter and repeat with pink batter so that cups are full with both colors.
4. Bake according to package directions and cool completely.
5. While cupcakes are baking, mix half off the icing with red food coloring to make pink icing and color the other half with blue food coloring to make blue icing.
6. When cupcakes are cool, frost each with half of the pink icing and half of the blue icing.
7. Sprinkle each cupcake with sugar.
