Finger Sandwiches

When ghouls have a tea party, what do you think they serve? Finger sandwiches! These little bites have a double meaning in a creepy sort of way. Any filling can be used, but I chose homemade pimento cheese spread for a certain effect - an icky effect. My kids thought these were especially delicious and perfectly gross all at the same time. Although the photo doesn't show it, my favorite breads to use for this are white, rye and pumpernickel. Sliced almonds are just the right thing to make these really look like fingers.
"Finger" Sandwiches
Hands-On Time: 15 minutes
Ready In: 15 minutes
Serves: Makes 9 sandwiches
Ingredients:
6 slices bread - more dense breads work better
1/2 cup shredded cheddar cheese
3 oz. cream cheese plus extra for "glue"
2 tablespoons minced pimento
9 almond slices
Directions:
1. Mix cheddar and cream cheese until smooth, either by hand or in a blender or food processor.
2. Blend in pimento until distributed throughout cheese well.
3. Spread three slices of bread with cheese spread and top with remaining bread.
4. Using a serrated knife, gently saw off crusts and cut each sandwich into 3 strips.
5. Attach almond slices to the end of each sandwich with a bit of cream cheese.
