Favorite Recipe - Butter Pecan Bars

The fat bakes right out of these delicious bars...
My daughter requested these for her birthday this year but then at the last minute (I like to think in an effort to lighten her mother's load...), changed her mind and asked for root beer floats. While the floats were super easy and a simple treat of themselves, this recipe is one of our family's favorites. I love a dessert recipe that starts off with a cake mix. It's sort of that semi-homemade mentality, and I often cook that way, doctoring up a mix or purchased sauce, etc.

At any rate, you can take these bars to any event and be the bell of the ball. I'm serious. People will be falling all over themselves asking you for this recipe. And that's when you get to decide if it's one you'll share - - or not! My good friend Anne/Short Order Mom over at Cookies to Caviar has a policy of never withholding a recipe. Generally speaking, I do, too. However, there are times when you just want a recipe to be yours. Your signature dish or dessert. Since I'm usually more of a throw cook, it's very hard for me to share a lot of my recipes anyway because often I truly don't have one. Of course, my husband would contend that's why nothing ever tastes the same twice. Mind you, I don't think he's complaining. However, he has a point. If you rarely use a recipe, you're never quite sure what you did last time that made that pork tenderloin taste so good. Ah, well. It keeps life interesting.

Now, with baking, on the other hand, it's more of a science, and you do need to be rather precise with your measurements,etc. So, don't go too crazy with your "own rendition" of the following recipe.

Princess Peg's Scrumptious Butter Pecan Bars

Preheat oven to 325 degrees.
- Butter Pecan Cake Mix
- 1 stick butter, softened
- 1 egg (I use egg substitute)
Mix the above ingredients just until combined. Press into a greased 9 x 13" baking pan, preferably glass.
- 1 - 8 oz. package cream cheese (I use light)
- 1 stick butter, melted
- 2 eggs (or egg substitute)
- 1 lb. box powdered sugar (or 4 cups)
Mix the above with a mixer until light and fluffy, and pour over top of first mixture.
- 1/2 to 3/4 cup chopped pecans
Sprinkle pecans over top. Bake at 325 degrees for 50 to 60 minutes. The bottom should be golden and the top turning golden, as well. Allow bars to cool before cutting. These are equally good cold or warm. I cut them small, so you can have lots and not feel like you've had too many! HA! Also, you can substitute German Chocolate if you absolutely can't find the Butter Pecan cake mix.
