Pink and Blue Cupcakes

Posted October 16, 2008

We picked up our copy of the Sleeping Beauty 50th Anniversary DVD last week and in honor of this happy occasion, I've made cupcakes. I think cupcakes are such a fun vehicle for many different decorations, and I know for sure that the kids feel the same.

Three of my very favorite Disney fairies aren't Disney Fairies at all; Flora, Fauna and Merryweather of Sleeping Beauty are simply fairies. These pink and blue bites are inspired by a… Read More

Pecan Pies in Pumpkin Shells

Posted October 09, 2008
This fun recipe is perfect for this time of year. From harvest time to Halloweeen to Thanksgiving, these little pies are both cute and delicious. My mother has made them for dinners and she uses the tiny gourds that look just like pumpkins. Gourds are certainly edible, but can be very bitter. Moms were always wonderful, but I've decided to use mini pumpkins for these. Mini pumpkins are available just about everywhere right now and you'll need ones the size… Read More

Pumpkin, Black Bean and Corn Soup

Posted October 01, 2008
I've never hidden my love of pumpkin and this time of year is chock full of my favorite squash. It's also getting chillier by the day and that calls for soup. This soup in particular is a blend of spicy and smooth - full of vitamins A and C with a healthy dose of potassium and fiber to boot. I love how colorful it is and it's very filling; a single bowl is a full meal. The kids like pumpkin in… Read More

Slow-Cooker Meatball Stew

Posted September 24, 2008
This stew is one of the easiest recipes I have and is liked by everyone in my family. It really doesn't get any simpler than this. Everything is readily available at my local grocer and putting this together is so fast you'll almost feel guilty about it.

Frozen potato wedges often come pre-seasoned and make a great addition to this stew. All herbs intensify in flavor as they cook, so the last half hour is all that is necessary… Read More

Finger Sandwiches

Posted September 18, 2008
When ghouls have a tea party, what do you think they serve? Finger sandwiches! These little bites have a double meaning in a creepy sort of way. Any filling can be used, but I chose homemade pimento cheese spread for a certain effect - an icky effect. My kids thought these were especially delicious and perfectly gross all at the same time. Although the photo doesn't show it, my favorite breads to use for this are white, rye and pumpernickel.… Read More

Simple Apple Cake

Posted September 10, 2008

It's apple time! I think apples are the best fruit going. They have a versatility like no other fruit; from sweet to savory and everything in between. The uses for this forbidden fruit are infinite. So, when apple-picking time comes along, I dive in and cook until the last round red beauty drops from the tree.

This recipe, known as Nana's Apple Cake here, came from my husband's maternal grandmother. She was Pennsylvania Dutch and was a wonderful cook. She passed… Read More
